    Embark on a Spice Trail that begins in the gardens of The Leela Palace Udaipur, where our chef will introduce you to the hallmark spices of Rajasthani cuisine. Accompanied by an expert guide, head to the local bazaars in a tuk-tuk to shop for authentic spices such as mathania chillies, ker and kumathiya berries, and sangri beans. Stop at famed local eateries to relish popular street snacks such as jalebis and kachoris. Back at the palace, head to the Sheesh Mahal kitchen for a private culinary masterclass with our Executive Chef to understand the use of spices in traditional cooking. Round off the perfect day with a traditional Rajasthani meal under the stars, where you can challenge yourself to identify the spices that have made their way to your plate!

    Reviving the lost Shikaar Cuisine 

    Journey to a bygone era of royal hunting expeditions by Maharajas and colonial hunts, and get a taste of classic Rajasthani Hunter’s Cuisine. Nestled in the green acres of the palace’s Guava Garden is a rustic setup reminiscent of shikaar or hunting camps. Here, our palace chefs will prepare a royal feast including Khad ka Khargosh (rabbit) and Gosht ke Boothey (mutton) in traditional mud chulhas, using secret recipes passed down from royal kitchens to dak bungalows. This is a one-of-a-kind experience for anyone fascinated by the link between food and history.

    Ingredient Trail

    Celebrate the heritage of Rajasthan’s lost rural cuisine based on indigenous ingredients, foraging, and unique food preservation techniques.  The Ingredient Trail begins with a visit to a local organic farm accompanied by our chef and a local guide. Under their guidance, forage for herbs, greens, and organic vegetables. Afterwards, sip on a chilled drink as you watch an authentic rural meal prepared the traditional way using the freshly picked produce. On the menu are delicacies such as Laal Maas (red meat curry), Dal Banjari (rustic lentils), Khargosh ki Mokal (rabbit dry curry) and Chui Mui ke Kofte (meatballs in gravy).
